All Purpose One Pot Boneless Leg of Lamb

Ingredients:
4 - 6lb boneless leg of lamb
1 cup milk
1 bottle of Shiraz (or Zinfandel)
1 large yellow onion, finely diced
1 & 1/2 cups each of diced celery and carrots
10 fresh tomatoes, roughly chopped (or 2 cans 14.5oz diced tomatoes)
2 Tablespoons dried oregano
2 large sprigs rosemary...
